If you love Kimchi, youre definitely going to LOVE this Kimchi fried rice. Kimchi typically made with cabbage but not exclusively. It is brined and fermented.
|Brine||2 Tablespoon (kimchi brine)|
|Kimchi||1 Cup (16 tbs)|
|Gochujang/Pepper paste||1 Tablespoon|
|Soy sauce||1 Tablespoon|
|Sesame oil||1 Tablespoon|
|Sliced spring onions||1/4 Cup (4 tbs)|
|Mushrooms||1 Cup (16 tbs)|
|Broccoli/Green pepper||1 Cup (16 tbs)|
|Cooked basmati rice||3 Cup (48 tbs)|
|Chopped spring onion greens||1 Tablespoon|
|Red chilli||1 , slice|
1.Add the gochujang and sesame oil to the brine.
2.Chop up the drained Kimchi.
3.Heat some oil and saute the spring onions, mushrooms, broccoli and green pepper.
4.Add the rice and all the marinade and mix well.
5.Add some spring onion leaves.
6.Fry an egg till the yolk is just set but still runny and add salt, pepper, spring onion leaves and red chilli.
7.Top the rice with the egg and serve.
