All of the delicious flavors of a blueberry pie in a healthy breakfast option?! Now thats something to get out of bed for.
Rolled oats | 1/3 Cup (5.33 tbs) | |
Milk/Nut milk | 1/3 Cup (5.33 tbs) | |
Plain greek yogurt | 1/3 Cup (5.33 tbs) | |
Maple syrup | 1 Teaspoon | |
Cinnamon | 1/4 Teaspoon | |
Vanilla extract | 1/2 Teaspoon | |
Broken walnut | 1 Tablespoon | |
Blueberries | 1 Cup (16 tbs) (For blueberry topping) | |
Sugar | 1 Teaspoon (For blueberry topping) | |
Water | 1 Teaspoon (For blueberry topping) |
MAKING:
1.In a jar or bowl mix together the oats, milk, yogurt, maple syrup, cinnamon, and vanilla extract.
2.Stir to combine and let it sit in the refrigerator for a few hours or overnight.
3.In the meantime, in a small pan over medium high heat add the blueberries, water, and sugar.
4.Let them cook until the blueberries burst and a delicious jam form, about 5-7 minutes
5.Turn off the blueberry mixture and let it come to room temperature.
SERVING:
6.To serve, add a good scoop of the blueberry mixture and some chopped walnuts to the top of the overnight oats and serve! A delicious and hearty breakfast that will be your new favorite.
