Breakfast Recipe- Blueberry Pie Overnight Oats

All of the delicious flavors of a blueberry pie in a healthy breakfast option?! Now thats something to get out of bed for.


Rolled oats 1/3 Cup (5.33 tbs)
Milk/Nut milk 1/3 Cup (5.33 tbs)
Plain greek yogurt 1/3 Cup (5.33 tbs)
Maple syrup 1 Teaspoon
Cinnamon 1/4 Teaspoon
Vanilla extract 1/2 Teaspoon
Broken walnut 1 Tablespoon
Blueberries 1 Cup (16 tbs) (For blueberry topping)
Sugar 1 Teaspoon (For blueberry topping)
Water 1 Teaspoon (For blueberry topping)



1.In a jar or bowl mix together the oats, milk, yogurt, maple syrup, cinnamon, and vanilla extract.

2.Stir to combine and let it sit in the refrigerator for a few hours or overnight.

3.In the meantime, in a small pan over medium high heat add the blueberries, water, and sugar.

4.Let them cook until the blueberries burst and a delicious jam form, about 5-7 minutes

5.Turn off the blueberry mixture and let it come to room temperature.


6.To serve, add a good scoop of the blueberry mixture and some chopped walnuts to the top of the overnight oats and serve! A delicious and hearty breakfast that will be your new favorite.
