Tandoori Nuggets - How To Make Tandoori Nuggets

Ingredients

For tandoori masala:
Coriander seeds 1/4 Cup (4 tbs) ((saboot dhaniya))
Cumin seeds 1 Tablespoon ((jeera))
Black peppercorns 1/2 Tablespoon
Dry red chillies 10
Clove 1/2 Tablespoon ((laung))
Cinnamon stick 1 Small
Fenugreek seeds 1 Teaspoon ((methi dhana / vendhyam))
Green cardamom/Black cardamom 5
Nutmeg powder 1/2 Teaspoon
Turmeric powder 1/2 Teaspoon
Ginger powder 1 Teaspoon ((sonth))
Garlic powder 1 Teaspoon
For the nuggets:
Boiled mashed potatoes 1 Cup (16 tbs)
Grated cabbage 1 Cup (16 tbs)
Chopped capsicum 1/2 Cup (8 tbs)
Finely chopped paneer 1/2 Cup (8 tbs)
Chopped green chilli 1/2 Teaspoon
Corn flour 1 Tablespoon
Bread crumbs 1/2 Cup (8 tbs) , divided ((1 tbsp for the mixture and rest is for coating))
Vegetable oil 3 Cup (48 tbs) ((For deep frying))
Red chilli powder 1/2 Teaspoon
Ginger garlic paste 1 Teaspoon
Tandoori masala powder 1 Teaspoon
Chopped coriander 2 Tablespoon
Salt To Taste
Slurry 1/2 Cup (8 tbs) ((corn flour slurry))

Directions

FOR TANDOORI MASALA:

MAKING:

1.Heat a non stick pan or wok / kadhai. Dry roast all the above-mentioned ingredients except nutmeg powder, turmeric powder, garlic powder and dry ginger powder till nice aroma comes. Dont over-roast the spices as it may affect the taste. Remove from the heat and allow to cool.

2.Grind roasted spices in a mixer to coarse powder. Add nutmeg powder, turmeric powder, garlic powder and dry ginger powder to it & grind again to smooth powder. Remove and keep aside. Allow to cool and store in an airtight container. Use it to prepare tikka or tandoori recipes.

FOR NUGGETS:

MAKING:

1.Mix the mashed potatoes together with the grated cabbage,carrot chopped capsicum,paneer,green chillies, coriander leaves, red chilli powder,ginger, garlic, prepared tandoori masala, corn flour, bread crumbs and salt.Form nugget rolls.

2.Heat oil in a pan and deep fry the nuggets till golden brown.

SERVING:

3.Serve hot.
