Roasted Beet Salad - Rule Of Yum Recipe

Today we're making roasted beet salad! This recipe is dairy-free (sans goat cheese mayo!), gluten-free, soy-free, and paleo-friendly.

Ingredients

Beet 1 Large , dice
Grapefruit 1 , divided (1/2 for juice and other half is for the salad)
Carrot 1/2 , thinly sliced
Cucumber 1 , thinly sliced
Celery stalks 2 , dice
Thyme sprigs 5
Pomegranate molasses 1 Teaspoon
Rose water 1/2 Teaspoon
Olive oil 3/4 Cup (12 tbs) (plus extra for roasting the beet)
Mayonnaise 1 Teaspoon
Salt 1/8 Cup (2 tbs) (for roasting the beet)
Ground black pepper To Taste
Pear 1 , slice
Walnut 2 Tablespoon , roast (for garnish)
Crumbled goat cheese 2 Tablespoon
