Chinese Dumplings - Rule Of Yum Recipe

Today we're making Chinese dumplings or POT STICKERS! This recipe is dairy-free.

Ingredients

For the dough:
Flour 1 1/4 Cup (20 tbs) (plus extra for dusting)
Boiling water 1 Cup (16 tbs)
Salt 1 Pinch
For filling:
Ground pork 1 Pound
Chopped bok choy 1 Cup (16 tbs)
Grated ginger 1 Tablespoon
Tapioca flour 1 Teaspoon
Baking soda 1 Teaspoon
Stock 3 Tablespoon
Shao xing wine 1 Tablespoon
Soy sauce 1 Tablespoon
Fish sauce 1 Teaspoon
Garlic 6 Clove (30 gm) , mince
Minced carrot 1/2 Cup (8 tbs)
Minced celery 1/2 Cup (8 tbs)
Sesame oil 2 Tablespoon
Salt To Taste
Ground black pepper To Taste
Chopped scallions 1/4 Cup (4 tbs)
Finely chopped parsley 1/4 Cup (4 tbs)
Vegetable oil 2 Tablespoon (for searing the dumplings)
Water 1/4 Cup (4 tbs) (for steaming the dumplings)
