Today we're making liver with a side of fava bean risotto. Just how Hannibal Lecter likes it!

Ingredients

For fava bean risotto:
Short grain rice 1 1/2 Cup (24 tbs) (aborio rice)
White vinegar 1/2 Cup (8 tbs)
Chicken stock 6 Cup (96 tbs)
Onion 1/2 , dice
Fava beans 2 Cup (32 tbs)
Finely chopped parsley 1/4 Cup (4 tbs)
Salt To Taste
Ground black pepper To Taste
Butter 2 Tablespoon
Olive oil 2 Tablespoon
White wine 1 Cup (16 tbs)
Grated parmesan cheese 1/2 Cup (8 tbs)
For liver in chianti:
Chianti 1/2 Cup (8 tbs)
Lamb liver piece 3/4 Pound
Spring onion whites 7 , dice
Onion 1/2 , dice
Salt To Taste
Flour 1 Teaspoon (For dusting)
Butter 1 Tablespoon
Olive oil 1/2 Tablespoon
Stock 1/2 Cup (8 tbs)
