Today we're making Watermelon Cucumber Gazpacho! Perfect for a hot summer day!
It can easily be made raw vegan/dairy-free. Just leave out the crème fraîche and replace the honey if necessary. This recipe is gluten-free, soy-free, and paleo-friendly.


Watermelon chunks 4 Cup (64 tbs)
Diced cucumber 1 1/2 Cup (24 tbs)
Orange bell pepper 1 , dice
Red onion 1/2 , finely chopped
Red chilli 1 , chopped finely
Cane vinegar 2 Tablespoon
Lime 1 , juiced
Finely chopped mint 1 Tablespoon
Honey 1 Tablespoon
Salt To Taste
Pepper To Taste
