Today we're making center-cut pork chops with a warm beet, arugula, and walnut salad.


Carrots 2 , slice
Beets 4 , dice
Water 1 Liter
Salt To Taste , divided (for salad and for pork chops)
Ground black pepper To Taste (for salad and for pork chops)
Garlic 2 Clove (10 gm) , mince
Arugula 1 Ounce
Thyme sprigs 4
Butter 2 Tablespoon
Chopped walnuts 2 Tablespoon
Shallot 1 , mince
Champagne vinegar 1 Tablespoon
Boneless pork chops 2
