Today we're making Irish Soda Bread, Rule of Yum style! This recipe is vegan, lactose-free, gluten-free, soy-free, egg-free and paleo-friendly.
|Almond flour||3 Cup (48 tbs)|
|Sea salt||1/4 Teaspoon|
|Baking soda||1 1/2 Teaspoon|
|Raisins||1/2 Cup (8 tbs) , boil ((or more))|
|Apple sauce||1/2 Cup (8 tbs)|
|Apple cider vinegar||2 Tablespoon|
|Vanilla extract||1 Teaspoon ((optional))|
|Coconut oil||1 Teaspoon ((For greasing))|
1.Preheat your oven to 350 degrees.
2.Plump your raisins by boiling them for 10 minutes. Set aside.
3.Once cooled, combine your almond flour, baking soda, salt and raisins into one bowl, and your applesauce, agave and vanilla into another. Combine separately then add wet to dry.
4.Grease your oven-safe bowl and place your dough inside, rounding the edges and scoring it.
5.Bake for 25 minutes, turn off oven and let sit inside for 10 more minutes.
6.Serve and enjoy!
