For brine:
Water/Half and half 4 Quart (or stock)
Ground black pepper 2 Tablespoon
Ginger piece 2 Inch
Onion 1
Garlic head 1 , mince
Lemongrass stalks 2 , finely chopped
Bay leaves 4 Small (optional)
Salt 1 Cup (16 tbs)
Brown sugar 1/2 Cup (8 tbs)
Whole turkey 14 Pound
For stuffing:
Onion 1 , slice
Ginger piece 1 1/2 Inch , slice
Lemongrass stalk 1
Pandan leaves 5
Evaporated milk 3/4 Cup (12 tbs) (for Basting liquid)
Water 1/4 Cup (4 tbs) (for Basting liquid)
Oil 1 Tablespoon (for Basting liquid)
