Fish And Chips - Tartar Sauce And Mushy Peas

Our Chef Nick Saraf shows you how to make Fish and Chips with tartar sauce and mushy peas on the side, a famous dish of English origin.

Ingredients

For beer batter:
Flour 300 Gram
Salt To Taste
Pepper To Taste
Beer 1 Pint ((very freezy))
For tartar sauce:
Egg yolks 6 Gram
Garlic 2 Clove (10 gm) , mince
Mustard sauce 1/2 Teaspoon
Oil 400 Milliliter
Vinegar 1/2 Teaspoon
Salt To Taste
Pepper To Taste
Finely chopped gherkins/Cornichons 2 Tablespoon
Finely chopped capers 2 Tablespoon
Finely chopped shallots/Finely chopped onion 2 Tablespoon
Finely chopped parsley 2 Tablespoon
For mushy peas:
Butter 1/2 Cup (8 tbs)
Minced garlic 1 Teaspoon
Shallots/Onion 4 , finely chopped
Green peas 450 Gram
Lemon 1/2 , juiced
Salt To Taste
Pepper To Taste
Water 2 Tablespoon
For chips:
Potatoes 10 , wedged
Oil 4 Cup (64 tbs) ((For deep frying))
For fish:
Basa fillets 2
Plain flour 1 Cup (16 tbs)

Directions

FOR BEER BATTER:

MAKING:

1.Add flour, salt, pepper mix it in and now add light beer and whisk the mixture, until its thick. Then refrigerate it for 2 hours.

FOR TARTAR SAUCE:

MAKING:

1.To make mayonnaise, add egg yolks and cloves of garlic and blend.

2.Add mustard, oil, after its been blended properly add vinegar and keep blending it now add salt and pepper and keep the mixture blending.

3.To make tartar sauce, add Gherkins, finely chopped Shallots , Capers mix everything together.

4.Add chopped Parsley and mix it properly.

5.Refrigerate it till we need to use it.

FOR MUSHY PEAS:

MAKING:

1.In a pan add butter and let it met then add garlic, shallots and cook the ingredients until the shallots turn opaque.

2.Add green peas, juice of half a lemon, salt and crushed black pepper and water .

3.Blend it until the peas turn mushy.

FOR CHIPS:

MAKING:

1.In a pan, boil the oil on the low flame that is 110 degrees. Place the chips one by one.

2.After 5-7 minutes, the potatoes are half cooked so place them on an absorbent sheet of paper and leave them to cool.

FOR COOKING THE FISH:

MAKING:

1.Pat the fish with plain flour and leave it for 4-5 minutes and dip it in the beer batter .

2.Cook it in the oil.

3.When the fish is golden brown take it on the absorbent sheet.

4.Cook the half boiled potato chips again in the same oil, in which you have cooked the fish.

SERVING:

5.Fish and Chips are ready to be served!
