Chef Nick shows you how to make Fluffy Pancakes with Caramelized bacon and Blueberry Jam.
|Butter||2 Tablespoon (or 30 gms)|
|Milk||4 Cup (64 tbs) (or 177 ml)|
|Vanilla essence||1 1/2 Teaspoon (or 7 ml)|
|Flour||1 Cup (16 tbs) (or 140 gms)|
|Castor sugar||2 Tablespoon (or 30 gms)|
|Baking soda||1/2 Teaspoon (or 2.5 gms)|
|Baking powder||1 Teaspoon (or 5 gms)|
|Butter||1 Tablespoon (for cooking)|
|For side of bacon:|
|Maple syrup||2 Tablespoon (for caramelisation)|
|For blueberry jam:|
|Blueberries||1/2 Cup (8 tbs)|
|Sugar||1/2 Cup (8 tbs) (or 80 gms)|
|Water||1/6 Cup (2.67 tbs) (or 2 tsp)|
FOR FLUFFY PANCAKES:
1.Take milk in a bowl, add an egg and melted butter in it and whisk it thoroughly, then add vanilla essence or extract and whisk it to completely incorporate it.
2.Take another bowl and flour, castor sugar, baking soda, salt and baking powder and mix all of it together.
3.Now mix the dry ingredients to wet ingredients and mix them well till the time there are no lumps. Your pancake batter is ready.
4.Now take a flat pan, on a low to medium heat. Add butter to the pan and when the butter starts to bubble, pour in the batter, keep it thick. Once you get large bubbles on the upper side , its time to flip the pancake and let the other side cook. Pancakes are done.
FOR SIDE OF BACON:
1.Take a pan and put in medium flame and add the bacon directly without using any oil or butter.
2.Once they are cooked take them out on an absorbent paper.
3.Now take a clean pan and add some maple syrup to reduce in the pan, when the syrup starts bubbling, add the bacon into the pan.
4.Saute it in the pan. Once the bacon is covered with the syrup take it out on a plate.
FOR BLUEBERRY JAM:
1.Add fresh blueberries in a saucepan, add sugar and water to the pan.
2.Now keep the pan on a slightly high flame and let the mixture reach the temperature of 105 degrees.
3.Once the mixture reaches this temperature, switch off the gas and check the mixture for soft threads.
4.Take a drop of the mixture after its considerably cooled down between your fingers and try to make soft threads. If threads are formed, its done.
5.Assemble it all and serve!
