This DELICIOUS and fancy twist on a grilled cheese is going to be your new favorite. It's easy to make and so tasty! Perfect for lunch or dinner.
For yogurt spread: | ||
Greek yogurt | 1/4 Cup (4 tbs) | |
Garilc | 1 Clove (5 gm) , grated | |
Lemon zest | 1 Teaspoon | |
Salt | To Taste | |
Pepper | To Taste | |
For sandwich: | ||
Bread slices | 6 (I like to use sprouted grain Ezekial bread) | |
Chopped spinach | 1/4 Cup (4 tbs) | |
Chopped artichoke hearts | 1/4 Cup (4 tbs) | |
Shredded monterey jack cheese | 1/2 Cup (8 tbs) | |
Butter | 1 Tablespoon |
MAKING:
1.Heat a griddle pan or skillet up on medium high heat. Melt a tablespoon of butter on it.
2.In a small bowl combine the Greek yogurt, lemon zest, garlic, salt, and pepper
Spread the mixture on the top of both pieces of bread.
3.To a piece of bread add the chopped spinach, artichokes, and a liberal amount of shredded cheese.
4.Add the other slice of bread yogurt side down to the top of the mixture and add to the preheated pan.
5.Cook on one side until golden brown, about 2-3 minutes. Flip and do the same on the other side.
SERVING:
6.Serve hot and enjoy!
