Happy first day of Spring!! Celebrate this exciting time with my easy to make baked doughnuts. Every bite tastes like Spring and you won't be able to get enough.
All purpose flour | 2 Cup (32 tbs) | |
Sugar | 1/2 Cup (8 tbs) | |
Baking powder | 1 1/2 Teaspoon | |
Salt | 1/2 Teaspoon | |
Buttermilk | 3/4 Cup (12 tbs) | |
Eggs | 2 Large | |
Honey | 1/4 Cup (4 tbs) | |
Melted butter | 2 Tablespoon | |
Vanilla extract | 1 Tablespoon | |
Diced strawberries | 1 Cup (16 tbs) | |
For glaze: | ||
Diced strawberries | 1/2 Cup (8 tbs) | |
Sugar | 2 Tablespoon | |
Confectioners sugar | 1 Cup (16 tbs) |
GETTING READY:
1.Preheat your oven to 425 degrees F.
2.In a small bowl get started with your glaze by adding the 1/2 cup diced strawberries and 2 tablespoons sugar. With a fork macerate the strawberries to allow all of the juices to come out. Set aside
MAKING:
3.In a bowl mix together the flour, sugar, baking powder, and salt.
4.In another bowl mix together the buttermilk, eggs, honey, melted butter, and vanilla extract.
5.Add the wet ingredients to the dry and stir to combine.
6.Fold in the diced fresh strawberries.
7.Lightly grease your doughnut pans and fill 2/3 way full with the batter.
8.Put them into the oven to cook for 8 minutes or until a toothpick comes out clean.
9.Once they are cooked let them cool slightly while you make the glaze.
10.In a bowl add the confectioners sugar and the juice that the strawberries produced. Don't add in the actual strawberries! Start by adding 2 tablespoons and go from there. If it gets too runny, add in more sugar and if it is too thick, add in more juice.
SERVING:
11.Dip the doughnuts in the glaze, shake off the extra, and eat! Happy Spring!
