Orzo | 1 1/2 Cup (24 tbs) (((cook according to package directions))) | |
Cucumber | 1/2 , dice | |
Green bell pepper | 1/2 , dice | |
Red onion | 1/4 , dice | |
Cherry tomatoes | 1 Cup (16 tbs) , cut in half | |
Chopped pitted olives | 3/4 Cup (12 tbs) | |
Feta | 2 Ounce , cubed | |
Garlic | 2 Clove (10 gm) , mince | |
Fresh oregano | 1 Tablespoon , mince | |
Olive oil | 1/4 Cup (4 tbs) ((any good quality of olive oil)) | |
Wine vinegar | 1/4 Teaspoon | |
Dijon mustard | 2 Teaspoon | |
Salt | To Taste | |
Pepper | To Taste |
MAKING:
1.Cook your orzo according to package directions and strain well. Add into a bowl.
2.To the orzo add in the diced cucumber, green bell pepper, red onion, cherry tomatoes, olives, and feta.
3.In a small bowl add the minced garlic, oregano, red wine vinegar, dijon mustard, and a good amount of salt and pepper. Stir to combine. Slowly whisk in the olive oil to make the vinaigrette.
4.Pour the vinegar over the pasta salad, and mix completely.
