Side Dish - Mediterranean Style Orzo Salad

Looking for an easy and DELICIOUS side dish?! This flavor packed salad can be made in minutes and everyone won't be able to stop eating it! Impress everyone today by making this delicious Orzo pasta salad!


Orzo 1 1/2 Cup (24 tbs) (((cook according to package directions)))
Cucumber 1/2 , dice
Green bell pepper 1/2 , dice
Red onion 1/4 , dice
Cherry tomatoes 1 Cup (16 tbs) , cut in half
Chopped pitted olives 3/4 Cup (12 tbs)
Feta 2 Ounce , cubed
Garlic 2 Clove (10 gm) , mince
Fresh oregano 1 Tablespoon , mince
Olive oil 1/4 Cup (4 tbs) ((any good quality of olive oil))
Wine vinegar 1/4 Teaspoon
Dijon mustard 2 Teaspoon
Salt To Taste
Pepper To Taste



1.Cook your orzo according to package directions and strain well. Add into a bowl.

2.To the orzo add in the diced cucumber, green bell pepper, red onion, cherry tomatoes, olives, and feta.

3.In a small bowl add the minced garlic, oregano, red wine vinegar, dijon mustard, and a good amount of salt and pepper. Stir to combine. Slowly whisk in the olive oil to make the vinaigrette.

4.Pour the vinegar over the pasta salad, and mix completely.


5.You can serve right away or make it ahead of time! Enjoy!
