Baked Beans In A Pressure Cooker
Baked beans - without the long baking time!
Bacon slices | 4 , finely chopped | |
Onion | 1 Small , mince | |
Garlic | 3 Clove (15 gm) , crush | |
Dried small white beans | 450 Gram , rinsed | |
Packed dark brown sugar | 1/2 Cup (8 tbs) (110g) | |
Strong black coffee | 1/2 Cup (8 tbs) (125mL) | |
Hot sauce | 1/2 Teaspoon (2 mL) | |
Coarse salt | 1 1/2 Teaspoon (7mL) | |
Chilli powder | 1/2 Teaspoon (2mL,optional) | |
Mustard powder | 1 Tablespoon (15mL) | |
Molasses | 1 Tablespoon (15mL) | |
Tomato passata | 1 Cup (16 tbs) (250mL) | |
Chicken stock | 4 Cup (64 tbs) (1L) | |
Cider vinegar | 2 Tablespoon (30mL) |
MAKING:
1.Select sauté, hi heat, and preheat the cooking bowl.
2.Add the bacon and cook until beginning to crisp, about 3 minutes.
3.Stir in the onion and cook until softened, 3 more minutes.
4.Stir in the garlic and cook for 30 seconds.
5.Stir in remaining ingredients, except for vinegar.
6.Select pressure cook.
7.Adjust cooking time to 25 minutes.
8.When cooking has completed, release pressure, open the lid and select reduce and desired heat level.
9.Add the vinegar and cook, stirring occasionally, until the liquid has thickened to a syrupy consistency.
SERVING:
10.Serve immediately.
