|Russet potatoes||3 Pound , boil|
|Green onions/Minced white onion||4 , slice (thin or 1/4 cup of alternate ingredient)|
|Minced dill pickles||2 Tablespoon|
|Pickle juice||2 Tablespoon|
|Celery seeds||1/2 Teaspoon|
|Yellow mustard||1/4 Cup (4 tbs)|
|Hard boiled eggs||2 , grated|
|Mayonnaise||1/4 Cup (4 tbs)|
1.Preheat oven to 450F.
2.Place chopped vegetables in the bottom of the bowl and top with potatoes.
3.Stir in pickle juice, celery seed and mustard.
4.Add eggs, mayonnaise, salt, pepper and mix well.
5.Serve and enjoy!
1.An easy, classic potato salad recipe. Tastes best if allowed to sit overnight in the refrigerator.
2.Lacking celery seed, you may use celery salt. Start with 1/2 teaspoon but you may need more. The celery salt will take the place of celery seed and salt. I will tell you that celery seed is preferred, and tastes better in the final dish than celery salt.
