In this Valentines Day episode, we make CHOCOLATE ICE CREAM!
Milk | 3/4 Cup (12 tbs) | |
Heavy cream | 1 1/2 Cup (24 tbs) | |
Chocolate | 4 Ounce , chop (70% chocolate, valrhona is used) | |
Egg yolks | 5 | |
Superfine sugar | 5/8 Cup (10 tbs) |
MAKING:
1.Add the milk and cream to a pot and bring to a boil, then simmer.
2.Add the chocolate and stir in to melt.
3.In a separate bowl, whisk the egg yolks and sugar until smooth.
4.Add a ladle of hot chocolate mixture to the sugar/egg mixture and quickly whisk.
5.Now add the sugar/egg mixture to the pot of hot melted chocolate on the stove. Let this cook for about 8-10 minutes.
6.Once it all looks nice and creamy, pour mixture through a fine sieve. Let this cool before adding it to your ice cream machine.
7.Churn for about 25-30 minutes. Add to a container and freeze for about 3 hours.
SERVING:
8.Serve and enjoy.
NOTES:
Eat this within a couple of days, because it won't be the same if it sits around too long.
