I don't know about you but I always seem to go a little bananas at the store when buying bananas and seem to ALWAYS end up having a plethora over overripe bananas. Since it's still the beginning of the year and I'm on a health kick I decided to use them up by making a healthy version of one of my favorite things ever- banana bread.
Overripe bananas | 3 | |
Maple syrup | 1/4 Cup (4 tbs) (organic) | |
Melted coconut oil | 1/4 Cup (4 tbs) | |
Eggs | 2 | |
Vanilla extract | 1 Teaspoon | |
Whole wheat flour | 1 1/2 Cup (24 tbs) | |
Baking powder | 1/2 Teaspoon | |
Salt | 1/4 Teaspoon | |
Ground cinnamon | 1/2 Teaspoon | |
Dark chocolate chips | 1/2 Cup (8 tbs) |
GETTING READY:
1.Preheat your oven to 350 degrees F.
MAKING:
2.In a bowl mash your ripe bananas with a fork
3.To the bananas add the maple syrup, melted coconut oil, eggs, and vanilla. Whisk until combined
4.To that add in the whole wheat flour, baking powder, salt, and cinnamon. Stir until just combined
5.Fold in the dark chocolate chips and pour into a greased loaf pan. You can add sliced bananas or more dark chocolate on the top if you'd like!
6.Bake until a tester comes out clean, about 30 minutes
7.Let it cool slightly before taking out of the pan.
SERVING:
8.Slice and serve.
