2 Hearty Soups In IP Chickpea Noodles Soup And Minestrone Soup

In this episode, I am sharing Chickpea Noodle Soup and Minestrone Soup. They are really quick and easy to put together. Just be sure to soak dry beans overnight or use canned beans. I prefer to start with dry beans.

Ingredients

For minestrone soup:
Kidney beans 1/4 Cup (4 tbs) , soaked
Oil 1 Tablespoon
Onion 1/3 Cup (5.33 tbs)
Salt To Taste
Pepper To Taste
Red pepper flakes 1 Teaspoon ((or as per your taste))
Celery 1/3 Cup (5.33 tbs)
Carrot 1/3 Cup (5.33 tbs)
Green beans 1/3 Cup (5.33 tbs)
Potato 1/3 Cup (5.33 tbs)
Mushroom 1/3 Cup (5.33 tbs)
Minced garlic 1 Tablespoon
Diced tomatoes 1/2 Cup (8 tbs) ((canned))
Pasta 1/3 Cup (5.33 tbs) ((pasta of your choice))
Vegetable stock/Water 2 Cup (32 tbs)
Mixed dried italian herbs 1 Teaspoon
Sugar 1 Teaspoon ((optional))
For chickpea noodles soup:
Oil 1 Tablespoon
Onion 1/3 Cup (5.33 tbs)
Salt To Taste
Chopped garlic 1 Tablespoon
Carrot 1/3 Cup (5.33 tbs)
Mushroom 1/3 Cup (5.33 tbs)
Celery 1/3 Cup (5.33 tbs)
Soaked chick peas 1/2 Cup (8 tbs) ((dried))
Ramen noodle 2 1/4 Ounce
Vegetable stock 2 Cup (32 tbs)
Black pepper To Taste
Paprika/Cayenne pepper 1 Teaspoon
Diced tomatoes 1/2 Cup (8 tbs) ((canned))
Ramen noodle seasoning 1 Packet
