Quinoa Lentil Oat Khichdi Vegetable Stew

Goodness of everything in one single pot!

Ingredients

Quinoa 1/4 Cup (4 tbs)
Lentil 1/4 Cup (4 tbs) (I use Mung daal)
Rolled oat 1/4 Cup (4 tbs) (old fashioned)
Basmati rice 1/4 Cup (4 tbs)
Oil 1 Tablespoon
Ghee 1 Tablespoon
Mustard seeds 1 Teaspoon
Cumin seeds 1 Teaspoon
Turmeric 1/4 Teaspoon
Red chilli powder To Taste
Coriander and cumin powder 1 Tablespoon
Garam masala To Taste (optional)
Mixed vegetable 3 Cup (48 tbs) (Vegetables of your choice I use onion, potato, carrot, cauliflower, green peas and so on)
Ginger garlic paste To Taste
Green chilli paste To Taste
Peanut 2 Tablespoon
Water 2 Cup (32 tbs)
Salt To Taste
Finely chopped coriander leaves 2 Tablespoon (for garnish)

Directions

GETTING READY:

1.Wash grains and lentils. Drain water and keep aside.

MAKING:

2.In a pressure cooker pot, heat up Oil Ghee on a medium to high heat.

3.Add Mustard seeds and let them splutter. Add cumin seeds, Turmeric, Ground coriander cumin, red chili powder and stir well.

4.Add onion and saute for about 1 minutes. Add ginger, garlic and green chili.

5.Add remaining vegetables and saute for another minute or so.

6.Add garam masala and salt.

7.Now, ready to add washed lentils and grains.

8.Add water, stir well and cover the pressure cooker.

9.Hear about 2-3 whistles only. If you like soft khichdi, 3 whistles or else 1 or 2 works as well for little grainy khichdi like biryani or pulao.

10.Turn off the stove and allow pressure cooker to cool.

11.Open the cooker and serve khichdi steamy hot with Chhas or Kadhi.

12.Garnish with coriander leaves.

13.Don't forget Kachumber salad and papad!
