3 Quick Veg Sandwich

Simple though the sandwich might seem to you, it continues to be a hot favourite with kids of all age groups! Perhaps it is the handy sumptuousness of a sandwich that makes it so loveable, or its versatility, but the fact remains that it is one of the most popular tiffin treats across the world.

Ingredients

For cucumber cheese sandwich
Whole wheat bread slices 8
Cheese spread 4 Tablespoon
Cucumber slices 24 (Thin)
For green chutney sandwich
Bread slices 20
Butter 10 Tablespoon
Chaat masala 2 Tablespoon (For sprinkling)
For green chutney
Roughly chopped coriander 1/2 Cup (8 tbs) ((Dhania))
Chopped spinach 2 Tablespoon ((Palak))
Bread slice 1 , torn into small pieces
Green chillies 3/4 Tablespoon (Roughly chopped)
Lemon juice 1/2 Tablespoon
Salt To Taste
For mayo veggie curd sandwich:
Bread slices 6
Butter 3 Tablespoon
For stuffing:
Mayonnaise 1/2 Cup (8 tbs)
Curd 1/4 Cup (4 tbs) (Dahi)
Shredded red cabbage 3/4 Cup (12 tbs)
Capsicum slices 1/2 Cup (8 tbs) (Red,Yellow, green)
Sliced onion 1/2 Cup (8 tbs)
Garlic paste 1/2 Tablespoon (Lehsun)
Tomato ketchup 1 Tablespoon
Chilli sauce 1 Tablespoon
Tabasco sauce 1/2 Tablespoon
Salt To Taste
Fresh ground black pepper To Taste (Kalimirch)

Directions

FOR CUCUMBER CHEESE SANDWICH:

MAKING:

1.Trim the edges of all the bread slices and keep aside.

2.Apply tbsp of cheese spread on each bread slice.

3.Place 2 bread slices on a clean, dry surface with the cheese spread side facing upwards.

4.Arrange 6 cucumber slices over it and sandwich it with another bread slice, with the cheese spread side facing downwards.

5.Cut the sandwich diagonally into 2 triangles.

6.Repeat steps 2 to 5 to make 3 more sandwiches.

SERVING:

7.Serve and Enjoy.

NOTES FOR PACKING:

Wrap in an aluminium foil, and pack in an air-tight tiffin box.

FOR GREEN CHUTNEY SANDWICH:

GREEN CHUTNEY:

MAKING:

1.Combine all the ingredients along with 2 tbsp water in a mixer and blend into a smooth paste. Keep aside.

CHUTNEY SANDWICH:

MAKING:

1. Place 2 bread slices on a clean, dry surface, spread tsp of butter on each bread slice and spread it evenly.

2.Spread tsp of green chutney on each bread slice and spread it evenly. 3.Sprinkle a little chaat masala evenly over both the buttered-chutney bread slices, finally cover with a buttered-chutney side facing downwards and press it lightly.

4.Repeat steps 1 and 2 to make 9 more sandwiches.

SERVING:

5.Cut each sandwich diagonally into 2 portions and serve.

FOR MAYO VEGGIE CURD SANDWICH:

MAKING

1.Divide the stuffing into 3 equal portions and keep aside.

2.Place a bread slice on a clean, dry surface with the buttered side facing upwards.

3.Spread a portion of the stuffing evenly on it and sandwich it using another bread slice with the buttered side facing downwards.

4.Cut the sandwich diagonally into 2 equal pieces.

5.Repeat steps 2 to 4 to make 2 more sandwiches.

SERVING:

6.Serve immediately.
