Salt 1/4 Teaspoon
Ground cinnamon 1 Teaspoon
Ground nutmeg 1 Teaspoon
Ground all spice 1/2 Teaspoon
Ground mace 1/2 Teaspoon
Ground cloves 1/2 Teaspoon
For the wet ingredients:
Softened butter 1 Cup (16 tbs)
Brown sugar 2 1/4 Cup (36 tbs)
Eggs 6 (room temperature,4 eggs separated and other 2 whole eggs)
Vanilla extract 1/2 Teaspoon
Brandy/Cranberry juice 1 Cup (16 tbs) (any juice that is dark in colour)
Juices 3/4 Cup (12 tbs) (1 orange,1 lime and 1 lemon juices along with zest and pulp)
Molasses 1/2 Cup (8 tbs)
For dry fruits
Chopped dates 1 Cup (16 tbs)
Dried currants 1/2 Cup (8 tbs)
Golden raisins 3/4 Cup (12 tbs)
Dark raisins 1/4 Cup (4 tbs)
Assorted dried fruits 2 1/2 Cup (40 tbs)
Candied ginger 1/4 Cup (4 tbs)
Candied cherries 1/2 Cup (8 tbs) (red and green)
For whipping egg white:
Egg whites 4
Brown sugar 1 Teaspoon
Cream of tartar 1/4 Teaspoon
