Christmas is approaching.. Let's celebrate this season of the year with Kerala Plum Cake.
Each country has their own style of making cake for Christmas. I picked Plum Cake recipe in Kerala style. I have made following very easy and simple method.. Soak the dry fruits today and make the cake before Christmas..
This cake is loaded with caramel, variety of dry fruits and nuts. After baking the combined flavor of caramel, fruits and spices wafts through the kitchen. It's so tempting, soft, spongy and delicious. In this video, you will also learn how to soak dry fruits in rum/ brandy.


For soaking fruits:
Candied pineapple 30 Gram , chop
Tutti fruity 30 Gram
Dry dates 30 Gram , chop
Fresh dates 30 Gram , chop
Raisins 30 Gram
Cranberry 30 Gram
Blueberry 30 Gram
Chopped figs 30 Gram
Chopped cherries 30 Gram
Blackcurrants 30 Gram
For caramel:
Sugar 1/2 Cup (8 tbs) (75gms)
Water 250 Milliliter
For wet ingredients:
Butter 90 Gram (room temperature)
Powdered sugar 240 Gram
Eggs 4 (room temperature)
Caramel 250 Milliliter , prepared
Vanilla essence 1 Teaspoon
For dry ingredients:
Maida 200 Gram
Baking soda 1/4 Teaspoon
Baking powder 1/2 Teaspoon
Nutmeg and spice 1/2 Teaspoon (jayphal
Almond powder 30 Gram (2 tbsp)
Orange zest 1 1/2 Tablespoon
Dry fruits 1 Cup (16 tbs) , soaked
Mixed nut 7 , dry (chopped almonds, pistachio, cashew and walnut)
