Apple Upside Down Cake

This is the perfect fall cake recipe! Apple Upside-Down Cake - just like it's pineapple upside down cake cousin, it's moist and delicious with a hint of caramel. This recipe adds a Northern touch with some maple syrup.

Ingredients

For the topping:
Apples 2 Medium , slice (peeled,400g)
Butter 2 Tablespoon (30g)
Brown sugar 6 Tablespoon (80g)
Apple cider 1 Tablespoon (15mL)
Ground cinnamon 1/4 Teaspoon (1mL)
Maple syrup 1/4 Cup (4 tbs) (60mL)
For the cake:
Butter 1 Cup (16 tbs) (240g)
Firmly packed brown sugar 3/4 Cup (12 tbs) (190g)
Apple cider 2 Tablespoon (30mL)
Eggs 2 Large
Pure vanilla extract 1 1/2 Teaspoon (7mL)
Ground cinnamon 1 1/2 Teaspoon (7mL)
Ground ginger 1/2 Teaspoon (2mL)
Ground cloves 1/4 Teaspoon (1mL)
Coarse salt 1 Pinch
Baking soda 1 Teaspoon (5mL)
All purpose flour 1 1/2 Cup (24 tbs) (200g)
Apples 2 Medium , dice (peeled,400g)

Directions

GETTING READY:

1.Preheat the oven to 350F (180ºC).

2.Grease a deep 9" round cake pan.

3.Line the bottom with a parchment round, and grease that as well.

MAKING:

4.Peel, core and slice the topping apples into 1/4 rounds.

(Might as well peel, core, and dice the apples for the cake batter as well.)

5.Place the apple slices in an artful display in the bottom of the cake pan.

6.Place the remaining topping ingredients in a small pan over low heat, stirring until the sugar is fully dissolved.

7.Pour the topping mixture over the apples in the cake pan.

8.Cream the butter in a bowl with an electric hand mixer.

9.Add the brown sugar and continue creaming until light and fluffy.

10.Add the eggs one at a time and mix thoroughly.

11.Add the cider, and vanilla and mix together.

12.Mix the baking soda, spices, and salt into the flour, and then stir into the batter.

13.Add the chopped apple, and mix until just coated.

14.Gently drop scoops of the batter into the cake pan - being careful not to disturb the apple arrangement.

15.Bake for 50 to 55 minutes, or until a cake tester inserted near the centre comes out clean.

16.Let the cake cool in the pan for 5 minutes on a wire rack .

17.Turn the cake out onto a serving plate, and remove the parchment paper.
