For the marinade:
Malt vinegar 1/2 Cup (8 tbs)
Refined flour 1 Tablespoon
Curd 1/4 Cup (4 tbs)
Cinnamon powder 1 Teaspoon
Cloves powder 1 Teaspoon
Nutmeg powder 1 Teaspoon
Ground cardamom 1/4 Teaspoon
Salt To Taste
Boneless chicken thighs 10
For the sauce:
Curd 1/4 Cup (4 tbs)
Minced garlic 1/2 Teaspoon
Parsley 1 Tablespoon
Pepper 1 Teaspoon
Salt To Taste
Sesame paste 1/2 Cup (8 tbs)
Lemon juice 2 Tablespoon
Olive oil 1 Tablespoon
For plating
Pickled vegetables 1 Cup (16 tbs)
Sesame seeds 1 Tablespoon
Pita bread rounds 2



1.Mix together the malt vinegar, yogurt, vegetable oil, mixed spice, cardamom, salt and pepper.

2.Place the chicken thighs into the mixture and turn to coat.

3.Cover and marinate in the refrigerator for 15 minutes.


4.In a small bowl, mix together sesame paste, yogurt, garlic, lemon juice, olive oil, and parsley.

5.Season with salt and pepper.

6.Heat some oil in a pan.

7.Cook until chicken is browned and cooked through.

8.Warm the pita bread and spread the shawarma sauce.

9.Place sliced chicken on the pita bread with pickled vegetables and sprinkle sesame seeds.


10.Serve and enjoy!
