Ingredients

For the egg mixture
Egg 3
Chopped green chillies 1 1/2 Teaspoon
Biryani masala 1/2 Teaspoon
Salt To Taste
For the biryani masala:
Oil 1 Tablespoon
Butter 1 Tablespoon
Bay leaf 1
Cumin seeds 1 Teaspoon
Coriander seeds 1 Teaspoon
Black peppercorn 6
Cloves 5
Dry red chilli 1
Ginger garlic paste 2 Teaspoon
Brown onions 1 Tablespoon , caramelize
Curd 1 Tablespoon , whisk
Biryani masala 1 Teaspoon
Cumin powder 1 Teaspoon
Garam masala 1 Teaspoon
Steamed rice 2 Cup (32 tbs)
Salt To Taste
For garnish
Fresh cream 2 Teaspoon
Butter 1 Teaspoon
Saffron 4 ((kesar))
Brown onions 3 Tablespoon
Wheat flour dough 1 Cup (16 tbs) ((atta roti,enough to cover and seal the Kulhad from top))

Directions

GETTING READY:

1.In a bowl, whisk eggs, add chopped green chillies, red chili powder, biryani masala, salt and keep aside.

MAKING:

2.Heat oil in a pan, add bay leaf, cumin seeds, coriander seeds, black pepper, cloves, dry red chilli and stir well.

3.Add ginger garlic paste, brown onions, whisked curd (to avoid lumps) and cook well.

4.Add biryani masala, cumin powder, garam masala and stir well.

5.Toss the steamed rice in this masala and add salt to taste.

6.Add the tossed rice in a kulhad and pour the egg mixture on top.

7.In a small bowl mix saffron (kesar), cream and butter. Put on the edges of the kulhad.

8.Add some brown onions (caramelized) on top.

9.Cover the kulhad with wheat flour dough (atta roti) and brush with butter.

10.Bake at 180 degree C for 15-20 mins.

11.Once the roti on top is cooked, remove it.

SERVING:
