Palak Paneer Rolls - Spinach And Cottage Cheese Rolls - Veg Starter/Appetizer

Paneer cubes 1 Cup (16 tbs)
Pureed spinach 1 Cup (16 tbs) (palak)
Curd 1 Cup (16 tbs) (mixed with water)
Cumin seeds 1 Teaspoon
Sliced onions 1 Cup (16 tbs)
Chopped garlic 1/2 Cup (8 tbs)
Coriander paste 1 Teaspoon
Turmeric powder 1 Teaspoon
Coriander powder 1 Teaspoon
Red chilli powder 1 Teaspoon
Spinach leaves 10 Large (palak)
Cheese mix 1 Cup (16 tbs) (grated mozzarella and processed cheese)
Lemon 1
Salt To Taste
Black salt 1/2 Teaspoon
Oil 2 Tablespoon (to cook)
Ghee 1 Tablespoon
For garnish
Fresh cream 1 Tablespoon
Red chilli powder 1 Teaspoon
Onion rings 6
Lemon wedges 2


Getting ready:

1.Blanch spinach (palak) leaves till soft and malleable, dip them in ice cold water (to prevent further cooking and colour change) and keep it aside.


2.In a pan, heat oil, add cumin seeds and let it sputter.

3.To this add sliced onions and let it turn golden brown. Add garlicand sauté.

4.To this add the curd and water mixture.

5.Add turmeric powder, red chilli powder, coriander powder and black salt.

6.Cook till it all comes together.

7.Add the palak puree, and the coriander paste. Add the paneer (cubed) and cook it together.

8.Add salt and squeeze some lemon juice.

9.Now once the mixture is ready, cool it (This palak paneer needs to be of a thick consistency).

10.Add the cheese mix in the palak paneer mixture.

11.In the blanched leaves, add this mixture and roll it together.

12.Heat ghee in a pan and sear the rolled rolls.

13.Garnish with fresh cream and red chilli powder on top.


14.Serve with onion rings and lemon wedges.
