How To Make Bharwa Baingan - Stuffed Eggplant Recipe - Bhara Baingan Rolls

Just fill the baingan with all the love masala to roll them in your mouth!


Brinjal 1 , slice
Salt To Taste
Pepper 1/2 Teaspoon
Oil 1 Tablespoon ((for cooking))
Onions 2 , chop
Coriander seeds 1 1/2 Teaspoon
Cumin seeds 1/2 Teaspoon
Sesame seeds 1 1/2 Teaspoon
Poppy seeds 3/4 Teaspoon
Methi dana 1 Pinch
Turmeric powder 1 Pinch
Red chilli powder 1/2 Teaspoon
Grated coconut 1 Tablespoon
Salt To Taste
Roasted peanuts 2 Tablespoon
Garlic 8 ((roughly chopped))
Ginger 1 Inch ((roughly chopped))
Grated jaggery 1 Tablespoon
Tamarind pulp 2 Tablespoon
Curry leaves 1 Tablespoon ((spring of))



1.Slice the brinjals into thin round discs.

2.Add salt and pepper on both sides and keep aside.

3.Now dry roast the onions till they turn lightly brown and soften.

4.Dry roast together coriander seeds, sesame seeds, peanuts, cumin seeds, poppy seeds, dry coconut and methi dana till thy begun to change colour.

5.Grind together roasted onions, roasted spices, ginger, garlic, salt, turmeric powder, red chilli powder and jaggery to a very fine paste.

6.Add the tamarind pulp and mix well.

7.Place this masala in the brinjal slices and roll it up.

8.Add the brinjal rolls and grill until cooked.

9.Heat olive oil in a kadia and add curry leaves and sauté for a minute.

10.Garnish with curry leaves


11.Serve hot.
