Grilled Pineapple Shortcake Bars

Grilled pineapples are the bee's knees! So it's only right to kick off Labor Day with these grilled pineapple shortcake bars! If you liked my strawberry shortcake bars then you gotta try this version! Whether you make these pineapples on the grilled or in a grill pan it's a crowd pleaser and it really is super easy to make from scratch!

Ingredients

Cake  
Brown sugar 1/2 Cup (8 tbs) ((packed))
Granulated sugar 1/2 Cup (8 tbs)
Butter 1/2 Cup (8 tbs) ((room temperature))
Eggs 2
Vanilla extract 1 Teaspoon
All purpose flour
Baking powder 1 Teaspoon
Salt 1/4 Teaspoon
Buttermilk/Whole milk 1/2 Cup (8 tbs)
Cream cheese layer
Heavy whipping cream 1 Cup (16 tbs)
Powdered sugar 3/4 Cup (12 tbs) (divided)
Vanilla extract 1 Teaspoon
Cream cheese 8 Ounce (room temperature)
Pineapple topping  
Butter 1 Tablespoon
Fresh pineapple chunks 4 Cup (64 tbs)
Cinnamon 1/2 Teaspoon

Directions

MAKING:

1.Preheat oven to 350. F.

2.Grease and lightly flour a 9x13 inch glass baking dish. Set aside.

3.In a large bowl cream together brown sugar, granulated sugar, and butter.

4.Mix in eggs and vanilla extract.

5.Mix in flour, baking powder, and salt alternating with milk until well combined.

6.Spread batter into an even layer in prepared baking dish.

7.Bake for 18 minutes (check on it at the 16-minute mark, this cake is very thin and doesn't need long)

8.Let cool completely.

9.Meanwhile to create the cream layer, add heavy whipping cream to a large bowl.

10.Add in cup of powdered and vanilla extract.

11.Mix until soft peak form. Set aside.

12.In a medium bowl, mix together cream cheese and cup powdered sugar until creamy.

13.Add whipped cream mixture into cream cheese mixture until well combined.

14.Spread onto of cooled cake.

15.Cover cake and refrigerate for 3 hours.

16.To make the grilled pineapples, add butter to heated grill pan. (see grilling instructions in notes)

17.In a large bowl, add diced pineapples.

18.Toss with brown sugar and cinnamon.

19.Place pineapple in hot pan and cook until both sides are lightly caramelized.

SERVING:

20.When ready to serve, plate cake bars individually and top with pineapple.
