Fried Zucchini Rounds, AKA Fried Zucchini Chips are a great way to enjoy fresh zucchini. This recipe is my Mom's recipe and we ate this all of the time during the summer.
Zucchini | 2 Medium | |
Saltine cracker crumbs | 2 1/2 Cup (40 tbs) | |
Eggs | 2 | |
Vegetable oil | 2 Cup (32 tbs) (For deep frying) |
GETTING READY:
1.Wash zucchini, and slice into 1/4 inch rounds.
2.Scramble two eggs in a shallow pie plate.
MAKING:
3.Place zucchini rounds into the egg wash, then coat with cracker crumbs.
4.Fry the cracker crumb coated zucchini rounds in 350-degree vegetable oil for 1 to 2 minutes or until the rounds are golden brown.
5. Drain zucchini rounds on a wire rack before serving.
SERVING:
6. Serve and enjoy!
