Dinner Recipe - Thai Style Naan Pizza

One of my all time favorite pizza would have to be a Thai style one. I'm slightly obsessed with the combination of peanut sauce and cilantro. Using pre-made naan bread for the crust this delicious pizza will be ready in just minutes!

Ingredients

For peanut sauce:
Creamy peanut butter 1/2 Cup (8 tbs)
Coconut milk 1/2 Cup (8 tbs)
Honey 1 Teaspoon
Soy sauce 2 Tablespoon
Fresh squeezed lime juice 1/4 Cup (4 tbs)
Chili paste/Red pepper flakes 1 Teaspoon ((Sambal))
Garlic powder 1/2 Teaspoon
For pizza
Boneless skinless chicken breast 1
Salt To Taste
Pepper To Taste
Curry powder 1 Teaspoon
Coconut oil 1 Tablespoon
Naan bread 2
Sliced red pepper 1/2 Cup (8 tbs)
Shredded carrot 1/2 Cup (8 tbs)
Shredded red cabbage 1/2 Cup (8 tbs)
Thinly sliced red onion 1/2 Cup (8 tbs)
Shredded mozzarella cheese 1/2 Cup (8 tbs)
Chopped fresh cilantro 1/2 Cup (8 tbs)

Directions

MAKING:

1.Preheat your oven to 425 degrees F

2.Season the chicken breast liberally with salt, pepper, and curry powder

3.In a skillet melt the coconut oil over medium high heat. Add the chicken breast and cook on both sides until completely cooked through, about 5-7 minutes on each side depending on the thickness

4.While the chicken is cooking make the peanut sauce. In a bowl combine the peanut butter, coconut milk, honey, soy sauce, lime juice, Sambal chili paste, and garlic powder until smooth. Set aside

5.Thinly slice the red pepper, red onion, red cabbage, and shred about a half a carrot. Once the chicken is cooked thinly slice as well

6.Now it's time to assemble! Put the pieces of naan bread on a sheet pan and add some of the peanut sauce. As much or as little as you'd like

7.To the top add as much of the toppings as you'd like and then liberally sprinkle the top with the shredded mozzarella cheese

8.Put into the oven and let it bake until the cheese is melted, about 5-7 minutes

9.Once out of the oven sprinkle the top with fresh cilantro and slice.

SERVING:

10.Serve and enjoy!
