Summer Salads 3 Ways / Healthy Salad

Toss some fresh veggies along with some refreshing dressing to make three different summer salads for the long weekend!!

Ingredients

Salad 1:
Cucumber 1
Onion 1
Spring onion brushes To Taste
Curd 1 Cup (16 tbs)
Onion seeds 1 Teaspoon
Black pepper 1 Teaspoon
Black salt 1 Teaspoon
Salad 2:
French beans 1 Cup (16 tbs)
Tomato 1
Coriander 1 Cup (16 tbs)
Extra virgin olive oil 1/2 Cup (8 tbs)
Onion seeds 1 Teaspoon
Lemon juice 1 Teaspoon
Black salt To Taste
Salad 3:
Carrot 1 , shredded
Green peas 1/2 Cup (8 tbs)
Peanuts 1 Cup (16 tbs)
Lemon juice 1/4 Cup (4 tbs)
Black pepper 1 Teaspoon
Black salt 1 Teaspoon

Directions

MAKING:

Salad 1:

1. In a bowl add cubed cucumber, onion and spring onion.

2. Mix together curd, onion seeds, black pepper and black salt.

3. Pour this in with the vegetables, mix well and serve.

Salad 2:

4. Place together the beans, tomato, and coriander in a large bowl.

5. In a separate bowl mix extra virgin olive oil, onion seeds and lemon juice.

6. Pour this mix with the beans and tomato, mix well.

7. Serve with a sprinkle of black salt.

Salad 3:

8. Mix the shredded carrots, peas and roasted peanuts in a bowl.

9. To that add a mix of lemon juice, black pepper and black salt.

10. Mix all of it together, and serve.
