This time of year beautiful berries are bountiful. Make this very different but extremely delicious appetizer to take advantage of all the fresh berries!
Strawberries | 1 Pint , slice | |
Blackberries | 1 Pint | |
Blueberries | 1 Pint | |
Salt | To Taste | |
Pepper | To Taste | |
Honey | 1 Tablespoon | |
Balsamic vinegar | 1/4 Cup (4 tbs) | |
Fresh thyme leaves | 1 Teaspoon | |
Lemon | 1/2 , juice extracted | |
Baguette | 1 , slice | |
Olive oil | 1 Tablespoon | |
Goat cheese | 4 Ounce | |
Lemon | 1/2 , juice extracted | |
Lemon zest | 1 Teaspoon ((from 1/2 lemon)) | |
Garlic | 2 Clove (10 gm) , mince | |
Chopped fresh basil | 2 Tablespoon |
GETTING READY:
1.Preheat oven to 400F.
2.Line baking tray with aluminium foil and set aside.
MAKING:
3.In a baking pan, combine strawberries, blackberries, blueberries, blueberries, salt, pepper, honey, balsamic, lemon juice, thyme leaves and mix well.
4.Pop into oven and bake for 20 minutes.
5.Place baguette slices on baking sheet and drizzle top with olive oil. Sprinkle salt and pepper and pop into oven. Toast until golden brown.
6.In a bowl, combine goat cheese, lemon zest, lemon juice, garlic, salt, pepper and mix well until combined.
7.Assemble as shown in the video.
