Red Beet Pancakes - Festive Breakfast Recipe

Red Beet Pancakes are so festive and make breakfast extra special!


All purpose flour 1 Cup (16 tbs)
Whole wheat flour 3/4 Cup (12 tbs)
Light brown sugar 3 Tablespoon
Baking powder 1 Tablespoon
Kosher salt 1/2 Teaspoon
Beets 2 Medium , roast (pureed for about 3/4 cup)
Milk 1 1/4 Cup (20 tbs)
Plain greek yogurt 1/3 Cup (5.33 tbs)
Egg 1 Large
Unsalted butter 3 Tablespoon , melt
Vanilla extract 1 Teaspoon



1.In a bowl, combine all purpose flour, wheat flour, brown sugar, baking powder, kosher salt and mix well.

2.In a bowl, combine pureed beet, milk, yogurt, egg, butter, vanilla extract and mix well.

3.Mix flour mixture with beet mixture.

4.Heat griddle or pan and grease it with butter.

5.Drop 2 tablespoons of mixture onto greased pan and cook for 6 minutes (3 min per side).


6.Serve with desired accompaniments and enjoy!
