This fresh and simple couscous salad can be made in a jiffy. I have used whole wheat couscous salad in this recipe.
|Whole wheat couscous||1 Cup (16 tbs)|
|Chopped cucumber||1 1/2 Cup (24 tbs)|
|Chopped red onion||1/2 Cup (8 tbs)|
|Chopped tomatoes||1 Cup (16 tbs)|
|Fresh dill/Fresh herbs||2 Tablespoon|
|Olive oil||2 Teaspoon|
|Lemon juice||2 Teaspoon|
|Water||1 1/2 Cup (24 tbs)|
1.In a pot, boil water and cook couscous in it.
2.Simmer for 8-10 minutes and once done allow to cool.
3.In a bowl, add vegetables and toss well.
4.In a bowl, combine olive oil, vinegar, lemon juice and whisk well.
5.Pour over salad and stir to combine before serving.
6.Serve and enjoy!
