Avocado and Shrimp Salad

Diced apple brings a sweet crunchiness to this tangy shrimp salad, which is elegant enough to serve as lunch for guests yet portable enough to add to a container for a work lunch.


Fat free greek yogurt 2 Tablespoon
Canola oil 2 Teaspoon
Lime juice 3 Teaspoon
Salt 1/8 Teaspoon
Ground black pepper 1/4 Teaspoon
Apple 1 Small , dice
Finely chopped celery 1 1/2 Cup (24 tbs) ((about 3 stalks))
Chopped cilantro 1/2 Cup (8 tbs)
Chopped scallions 1/4 Cup (4 tbs)
Cooked peeled and deveined shrimp 1 Pound , chop
Pitted avocado 1 , dice
Bibb lettuce 4 Large ((optional))



1.In a bowl, whisk together yogurt, lime juice, oil, salt, pepper and whisk well to combine.

2.In a large bowl, combine apple, celery, cilantro, scallions, shrimp, avocado and mix well.

3.Chill until serving.


4.Serve in bib lettuce cups and enjoy!
