Chicken Cranberry Pecan Salad

This delicious, diabetic-friendly Chicken Cranberry Pecan Salad recipe combines fresh apples, dried cranberries, and chopped pecans with a light coating into one amazing side dish, appetizer or a healthy dessert that everyone will love!

Ingredients

Cooked skinless chicken breast 1 Cup (16 tbs) (chunks)
Coarsely chopped pecans 2 Tablespoon , toast
Chopped green apple 1/2 Cup (8 tbs)
Dried cranberries 3 Tablespoon
Chopped red onion 2 Tablespoon
Greek non fat yogurt 3 Tablespoon (plain)
Light mayonnaise 2 Teaspoon
Apple cider vinegar 1 Tablespoon
Dried thyme leaves 1 Teaspoon
Salt To Taste
Pepper To Taste

Directions

MAKING:

1.In a large bowl, combine chicken, pecans, apple, cranberries, and onions.

2.In a small bowl, mix together yogurt, mayonnaise, vinegar, and thyme.

3.Toss with chicken mixture. Season to taste.

4.Refrigerate at least an hour before serving.
