For the dough:
Whole milk 170 Gram ((3/4 cup))
Fresh yeast 30 Gram
Bread flour 325 Gram , sifted ((2 1/4 cups))
Pastry flour 325 Gram , sifted ((2 1/4 cups))
Eggs 2 Large ((at room temperature))
Granulated white sugar 110 Gram ((1/2 cup))
Vanilla extract 1/2 Teaspoon
Kosher salt 1/4 Teaspoon
Unsalted butter 120 Gram , cubed ((8 1/2 tablespoons, at room temperature))
For the chocolate filling:
Nutella 450 Gram
Bittersweet chocolate chips 200 Gram ((1 1/3 cups))
For the sugar syrup:
Granulated white sugar 160 Gram ((3/4 cup))
Water 120 Gram ((1/2 cup))
