Strawberry-Blueberry Spinach Salad

A great salad for the Spring and Summer. Candied pecans, avocado, and feta cheese make it even more delicious. Adapted from The Slow Roasted Italian.


For dressing:
Granulated sugar 2 Tablespoon
Extra virgin olive oil 1/4 Cup (4 tbs)
White wine vinegar 1/4 Cup (4 tbs)
Dijon mustard 1 Tablespoon
Garlic 2 Clove (10 gm) , pressed
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Paprika 1/4 Teaspoon
For salad:
Fresh baby spinach 10 Ounce
Red onion 1/4 Small , slice
Fresh strawberries 1 Quart , quartered (hulled)
Fresh blueberries 1/2 Cup (8 tbs)
Avocado 1/2 , cut in to medium pieces
Feta cheese crumbles 5 Ounce (1/2 package)
