Classic Salmon Fishcakes

Salmon is perfect for the beautiful time of year that is the spring, as we start to crave lighter and fresher foods. These Salmon Fishcakes make a fantastic midweek meal, or even a weekend lunch spent on the patio.


For salmon fishcakes:
Salmon fillets 2
Potatoes 4 Medium , quartered (peeled)
Onion 1 Small , finely chopped
Lemon 1 , juice extracted
Parsley/1 small bunch 1 Ounce , chopped finely
Butter 2 Tablespoon
Oil 1 Teaspoon
White wine vinegar 2 Tablespoon
For the crumb:
Soft breadcrumbs 1 Cup (16 tbs)
Plain flour 1/2 Cup (8 tbs)
Egg 1 , beaten (with water)
For the tartare sauce:
Mayonnaise 4 Tablespoon
Finely chopped red onion 2 Tablespoon
Chopped gherkin 2 Tablespoon
Capers 1 Tablespoon
Finely chopped dill 1 Tablespoon
