Carrot Cake Muffins

A wonderful addition to a brunch or to have for breakfast, these Carrot Cake Muffins are simple to make and most of the ingredients might be in your pantry.

All purpose flour 2 Cup (32 tbs)
Granulated sugar 3/4 Cup (12 tbs)
Baking soda 2 Teaspoon
Ground cinnamon 1 Teaspoon
Salt 1 Teaspoon
Canned crushed pineapple and juice 8 Ounce , drained (1 can)
Vegetable oil 1/4 Cup (4 tbs)
Eggs 2 Large
Egg whites 2 Large
Vanilla extract 1 Tablespoon
Grated carrots 3 Cup (48 tbs)
Toasted pecans 1/2 Cup (8 tbs)
Golden raisins 1/2 Cup (8 tbs)
