Homemade Soppressata Salami (Umai Dry)

Homemade Soppressata Salami using Umai's Dry Sausage Kit. This was the first time I have ever made this and it was awesome!

Ingredients

Pork shoulder 5 Pound (((berkshire)))
Soppressata spice 1 Packet
Kosher salt 65 Gram
Dextrose 5 Gram
Bactoferm tspx 1/4 Teaspoon
Warm water 1/2 Cup (8 tbs)
