Salad may be a tough sell for some little ones, but these lettuce cups are kid friendly and a whole new way for them of looking at leafy greens. They're crunchy, and in combination with the stir-fried chicken with herbs and a slightly sweet sauce it's really something special.
|Low sodium soy sauce/Tamari||1/4 Cup (4 tbs)|
|Minced cilantro||2 Tablespoon|
|Onion||1 Small , dice|
|Bell pepper||1 ((red, orange or yellow))|
|Garlic||1 Clove (5 gm) , mince|
|Minced ginger||1 Teaspoon|
|Ground chicken/Turkey||1 Pound|
|Lettuce cups||8 ((Bibb or Iceberg))|
1.In a bowl, combine soy sauce, honey and cilantro. Set aside.
2.In a large saute pan, heat oil and saute onion over medium heat for 2 minutes.
3.Add bell pepper and cook for 2 more minutes.
4.Add garlic, ginger, chicken and saute for 7 minutes.
5.Add soy sauce mixture, salt and cook for 2 minutes.
6.Fill lettuce cups and roll it as shown in the video.
7.Serve and enjoy!
