At this time of year when you can easily find things like potatoes, broccoli and cheese to make this delicious side dish, I hope you can find them where you're able to get the freshest produce possible!
Russet potato | 1 , peeled, cut into very small pieces | |
Broccoli florets | 1 Cup (16 tbs) | |
Cheddar cheese | 1/2 Cup (8 tbs) , shredded | |
Panko bread crumbs | 3/4 Cup (12 tbs) , divided | |
Salt | 1/2 Teaspoon | |
Egg | 1 Large | |
Garlic powder | 1/8 Teaspoon | |
Onion powder | 1/8 Teaspoon | |
Oil/Canola or vegetable | 1 Tablespoon |
MAKING:
1.In a steamer, boil potatoes for 8 minutes.
2.Add broccoli and steam for another couple of minutes or until tender.
3.Mash the potatoes, chop the brocooli and combine in a large bowl.
4.Add cheese, 3 tablespoons of panko, salt, egg, garlic powder, onion powder and mix well to combine.
5.Place remaining panko in a bowl and set aside.
6.Scoop 2 tablespoons of mixture, roll into balls and make patties.
7.Coat with remaining panko breadcrumbs.
8.Heat 1 tablespoon oil in skillet and fry for 3-4 minutes per side as shown in the video.
