Spinach Pancakes? I'm kinda worried that you're going to want to skip this recipe based on the name, but I beg you to give these pancakes a try.
Packed fresh spinach leaves | 1 Cup (16 tbs) | |
Buttermilk | 1 Cup (16 tbs) | |
Egg | 1 Large | |
Oil | 1 Tablespoon | |
Whole wheat flour | 1 Cup (16 tbs) | |
Sugar | 1 Tablespoon | |
Baking powder | 1 Teaspoon | |
Baking soda | 1/2 Teaspoon | |
Salt | 1/2 Teaspoon |
MAKING:
1.In a blender, combine spinach, egg, buttermilk, oil and blend until smooth.
2.In a bowl, whisk together wheat flour, sugar, baking powder, baking soda and salt.
3.Combine spinach mixture with flour mixture and mix until combined.
4.Heat a large pan and grease with oil.
5.Pour 1 tablespoon of pancake mixture and allow to cook. Flip to cook on both sides.
SERVING:
