Make Twinkies homemade!
For twinkies: | ||
Eggs | 3 , separated | |
Sugar | 3/4 Cup (12 tbs) (plus 2 tablespoons) | |
Boiling water | 1/4 Cup (4 tbs) | |
Lemon juice | 1 Tablespoon | |
Vanilla extract | 1 Teaspoon | |
Cake flour | 1 Cup (16 tbs) , sifted | |
Baking powder | 1 Teaspoon | |
Salt | 1/4 Teaspoon | |
Cream of tartar | 1/4 Teaspoon | |
For filling: | ||
Soft butter | 4 Tablespoon | |
Vanilla extract | 1/2 Teaspoon | |
Heavy cream/Milk | 1 Tablespoon | |
Powdered sugar | 1 Cup (16 tbs) , sifted |
GETTING READY:
1.Preheat oven to 375F.
2.Make twinkie molds as shown in the video and grease the molds with butter.
MAKING:
3.In a mixer, combine egg yolks and beat for 30-60 seconds.
4.Add sugar gradually and beat for 3 minutes until light and creamy.
5.Reduce speed and slowly pour boiling water. Add vanilla, lemon juice and mix well.
6.Whisk together flour, baking powder and salt in a small bowl. Add flour mixture to egg mixture and mix until creamy.
7.In another bowl, beat egg whites with cream of tartar for 30-90 seconds until soft peaks.
8.Fold in egg whites into batter in small batches.
9.Divide batter into 12 molds and pop into oven. Bake for 13-15 minutes and once done, allow to cool completely.
10.For filling, beat together butter, vanilla, cream and powdered sugar on low speed for 30-60 seconds until smooth.
11.Transfer to a ziplock bag and allow to rest in room temperature.
12.Once cakes are cooled, unwrap the twinkies from molds.
13.Poke holes and squirt a little icing as shown in the video.
