Smoked Buffalo Chicken Dip with Jalapenos on the Weber - A great Game Day Appetizer

Football season is here and it's time for appetizers. Check out this great Smokey buffalo chicken dip with smoked jalapenos.

Ingredients

Whole chicken 1 Medium
Jalapeno pepper 6 Medium
Cream cheese 16 Ounce , softened (2 packs)
Jalapeno jack cheese 150 Gram , divided (1/2 cup
Franks red hot sauce 1/2 Cup (8 tbs)
Blue cheese 1 Cup (16 tbs) , divided (3/4 cup
Cajun rub 1 Tablespoon

Directions

GETTING READY

1. Preheat the grill.

2. SMOKED CHICKEN: Place the cleaned chicken on it, close the lid and smoke it till fully cooked and the internal temperature reaches 165 degrees F. Remove from the grill and set aside for sometime or till it can be handled. Shred the chicken into small pieces. Set aside.

3. SMOKED JALAPENO: Grill the jalapenos along with the chicken. Remove from the grill when done. Slice them into half, remove the seeds and chop them finely. Set aside.

MAKING

4. In a bowl put the shredded chicken, cream cheese, jalapenos, jalapeno jack cheese, hot pepper sauce, melted blue cheese and Cajun rub. Mix them well till all are well combined. Taste and adjust the seasonings if required.

5. Add ½ of the crumbled blue cheese and mix well. Transfer it into an aluminium foil container. Sprinkle 2 tablespoon jalapeno jack cheese and remaining crumbled blue cheese on top.

6. Place it on the grill, close and cook for around 40 minutes or till the cheese melts. Remove from the grill and let it sit for a few minutes before serving.

SERVING

7. In a serving bowl or platter, serve the smoked chicken buffalo dip with crusty bread, or vegetables or nachos.
