Sunset Grilled Sweet Pepper White Bean Flat Bread

Grilled peppers in all varieties, marinated in balsamic atop a blend of white bean sauce and a short crust pastry.
One of my favorite lessons I learned on our summers in Italy is that bean dip should not be limited to pinto beans. Using a white bean to compliment the complex flavors of sweet peppers makes every bite a story in the making. Every dish should have a story, not just in the recipe but in the ingredients, and I love the fact that Sunset Produce has been family owned for four generations, and built the first greenhouse in North America in the 1940s. White italian beans 1 Can (10 oz)
Lemon 1/2 Small , juiced
Short crust pastry 1/2 Cup (8 tbs)
Salt To Taste
Pepper To Taste
Olive oil 2 Tablespoon
Grilled sweet peppers 1/2 Cup (8 tbs)



1. Pre heat the oven to 425 degrees F.


2. Strain the beans and add them to a food processor, blitzing them with a dash of olive oil, lemon juice, salt and pepper until they are smooth and creamy.

3. Remove and store in a container while you prepare the pastry.

4. Using one cup of short crust pastry, roll out until 5 mm thick and then bake until golden brown at 425F – usually around 20 minutes.


5. Remove from the oven, layer the bean dip across the top, and then top with the peppers and serve immediately.
