A delicious hot dip that is great served as an appetizer for a party or any occasion requiring an appetizer. This came from Southern Living.
|Parmesan cheese||1 Cup (16 tbs)|
|Reduced||fat sour cream|
|Mayonnaise||1/4 Cup (4 tbs)|
|Scallion||4 , sliced|
|Fresh lemon juice||3 Tablespoon|
|Garlic clove||1 , pressed|
|Pepper jack cheese||5 Ounce , shredded|
|Frozen spinach||10 Ounce , thawed, drained, chopped|
|Artichoke hearts in water||14 Ounce , drained and chopped|
|Cooking spray||3 Dash|
1. Preheat oven to 350F.
2. Grease a casserole dish with cooking spray.
3. In a bowl, stir together, parmesan cheese, sour cream, mayonnaise, scallion, lemon juice, garlic and Pepper jack cheese(1 cup). Fold in the spinach and artichokes. Transfer the mixture to the prepared casserole.
4. Sprinkle with the pepper Jack cheese( 1/4 cup). Bake at 350F for 30 minutes.
5. Serve with mixed crackers, toasted baguette slices or assorted vegetables.
